Pasta with Broadbeans (favabeans) and Anchovies with Agrestis Bellomio OliveOil

Serves 4 Persons



Cook the pasta. Double peel the beans and cook for 5 min in water with a pinch of salt. Blend the beans, add 2 tbsp Parmazan cheese, 2 tbsp olive oil, 1 tsp anchovies, and 1 or 2 tbsp cooking cream and blend well till a smooth puree. Add pepper to taste. Add the cooked pasta to the sauce and stir well. Decorate with sudried tomatoes, cut anchovies and serve with some Parmesan cheese.
